Philippe began as an agronomist in Brazil, working on rubber plantations, where he was among the first to test organic farming methods on soybeans.

Upon return to his native Catalonia, he initially took over the family insurance business, but was keen to stay connected to the earth. This led him, along with family and friends, to purchase a vineyard near Perpignan.  He began by planting new grape varieties on more than half of the estate and by completely renovating the winery. Already a pioneer in organic viticulture, he demonstrated that it was possible to produce high-quality grapes using alternative methods. His continuing passion for making exceptional wines in his home region is recognised by industry professionals and customers the world over. 

 

Organic Farming

Organic farming is tightly controlled with regular sampling and analysis in the vineyards and the cellar. Certain winemaking practices and materials are banned or strictly limited, and the permitted amount of sulphites is well below that which is allowed in conventional winemaking. 

Organic winegrowers fertilize their vines with compost and green manure. To protect them from disease and pests, they apply preventive methods, use natural substances, or employ biological controls. By paying particular attention to soil life and allowing the roots of the vines to develop deeply, organic farming promotes the best expression of the terroir.

Since August 1, 2012, the entire production process, from grape to wine, has been governed by European regulations. You are allowed to use the label "organic wine” only if rigorous standards are met and certification is granted.

 

The Harvest

At Château de L'Ou, we harvest exclusively by hand, in the morning from sunrise to noon, to preserve the freshness of the fruit. Our workers are trained to pick the grapes according to the highest quality requirements.

The grapes are placed in crates weighing approximately 10 kg to prevent damage during transport and to facilitate handling in the cellar. The harvest date is determined by tasting a sample of berries, paying particular attention to the quality of the skins and seeds.

 

The winery has been completely renovated since the estate was acquired in 1998 to improve the quality of the wines.
